firetruck BBQ is a world away from the classic Aussie barbie. It’s all about flavouring meat with spice rubs, and cooking low and slow American-style - smoking it for a flavour you won’t forget.

We’ve travelled across the USA’s ‘Barbecue Belt’ to bring back the secrets of restaurants and barbecue competitions from Texas to Kansas City, Memphis, Oklahoma and St Louis.

There’s no shortcut when it comes to the best barbecue. We use only top-quality meat, all-natural ingredients in our spice rubs and sauces, the finest fruit (apple, cherry or peach) and pecan woods for smoking, and most importantly, time – our meat is cooked slowly from anywhere between 4 to 18 hours. All fresh every day, the truck stays open until we’re sold out, so get in fast.
